Summer is in full swing here in Austin. Over the past week we’ve had temps approaching 110°. The only thing to do when it’s this hot is either get yourself down to Barton Springs Pool or make something icy to cool you down. These paletas are super easy and with the addition of tarragon, they’re not as cloying as most sweet popsicles. Plus, if you wanted to, you could add a popsicle to a glass and top it with some Prosecco for a bubbly summer treat.
- 2 cups blackberries
- 3/4 cup water
- 1/3 cup sugar
- pinch of kosher salt
- 2 teaspoons freshly squeezed lemon juice
- 2 tablespoons tarragon leaves
Add all ingredients to a blender and puree until smooth. Strain mixture through a fine-mesh sieve. Pour into popsicle molds. Freeze at least 6 hours or overnight.
